I really love this lychee sochu and had it two ways today:
the mimosa
The boba tea place near my house makes a delicious refresher with passionfruit and lychee, which are two of my favorite fruits. My husband juiced some passionfruits, so I decided to do a little mix and match with the sparkling wine I’ve been holding onto. I was very pleased with the result.
Lychee Passionfruit Mimosa
1.5 oz lychee sochu
1 oz passionfruit juice
Sparkling Wine Top

The Lychee Blossom is a low ABV “martini”, where the lychee pairs beautifully with the rosewater in the grenadine. It’s light and not too sweet. It’d be a nice alternative to a vodka based lychee martini with similar flavors and much less “punch”.
Lychee Blossom
2 oz lychee sochu
.5 oz lemon juice
.5 oz house grenadine
Sparkling wine top
House Grenadine
1 cup pomegranate juice
1 tablespoon rosewater
1 teaspoon lemon juice
1 cup white sugar
Heat juice to boiling, mix in sugar
